As you can see, the key is good stirring and temperature regulation. I use a heavy Le Creuset enameled cast iron pot, which is great at transferring heat slowly and evenly, preventing the hot and cool spots that are the bane to good caramelization (a tri-ply stainless steel saucepan would also work well). Every time the fond (that's the browned bits of sugars and proteins that stick to the bottom of the pot) threatens to burn, I add a few tablespoons of water and use a wooden spoon to scrape the bits up. The browned sugars and proteins end up dissolving in the water then spread themselves evenly around the onions.

Kenji does note that the catch here is that the resulting onions aren't quite as cooked down and tasty as they would be if you spent an hour poring over them, but he says they're 90% of the way there, and still better than cheats like adding sugar or baking soda to speed up the process, and saves a lot of time in the kitchen.

BEIJING -- Change in North Korea, and its potential impact on American interests in the Asia-Pacific, is likely to be on the agenda when US Secretary of State Hillary Clinton meets Chinese leaders next month on her region-wide tour.

Is the hermit kingdom, with its nuclear weapons program and a ?military-first policy? that prioritizes its 1.2 million-strong army, capable of social reform?

Or is the latest staged-managed imagery from Pyongyang?of a Swiss-educated young leader displaying a stylish wife, giving thumbs up to pop music and promising that the belt-tightening days are over?a sign of a new beginning for the impoverished and isolated nation?


The buzz about North Korea?s tantalizing hints of change has gained currency with the recent visit to China of Jang Song Thaek, the powerful uncle of the new North Korean leader Kim Jung Un, followed by reports that Kim himself is seeking to visit China next month.

China vowed greater support and investment in North Korea?s languishing China-style special economic zones, and urged Pyongyang to let ?market? principles guide its moribund economy.

But while signs are pointing to change in Pyongyang, North Korean propaganda was denouncing as ?hallucination? any talk of reform, denying that the new leadership is breaking with the past.

Authoritarian dictatorship
As a neighbor and ally, China is sensitive to any shift in Pyongyang?s policy directions that could impact China?s interests.? While Beijing provides Pyongyang with massive aid to prevent regime collapse that could cause regional instability, China is opposed to North Korea?s nuclear ambitions.

?I think it?s not possible for Pyongyang to sacrifice its military-first and nuclear arms policies, and that in turn will limit all possibilities for reform,? observed Zhang Liangui, China?s top scholar on North Korea who graduated from Kim Il Sung University in Pyongyang.

?I am not optimistic about reform because Kim Jun Un alone cannot decide, it will be decided by North Korea?s political system which prioritizes the army,? said Zhang, a professor of international strategic research at China?s central school for training communist party officials.

?There is low probability of significant change,? said Daniel Pinkston, Seoul-based senior analyst of the International Crisis Group.

North Korea?s system is ?structurally set up as an authoritarian dictatorship?as long as the Kim family is in power it will be extraordinarily difficult to renounce the legacy of his father and grandfather,? Pinkston told NBC News, explaining his group?s latest report analyzing the barriers to reform in North Korea?s militarized society.

Preventing a Gadhafi-like fate
?As long as the Kim family regime is in power, they will not surrender nuclear weapons.? But I do not see why this is an obstacle for reforms,? argued Andrei Lankov, a Seoul-based Russian scholar on North Korea who also attended Kim Il Sung University.

?They will keep their nuclear devices, five or ten of them, for the deterrence purposes, just to make sure that they will not suffer the sorry state of Colonel [Moammar] Gadhaf i?while reforming the country if they consider that reform suit their interest,? he told NBC News.

Lankov noted, however, the??destabilizing? effects of reform. ?Sadly, the conservatives might be correct and I will not be surprised if the reforms will bring about a sudden collapse of the North Korean state,? he said, alluding to the examples of East Germany and Tunisia.

?It is still possible to take steps toward the market without giving up the nuclear program, though you would have to limit military spending,? according to Daniel Sneider, associate director for research at the Asia-Pacific Research Center at Stanford University.

But for Sneider, one issue is the challenge posed to Pyongyang?s legitimacy by South Korea. North Korea used to be more prosperous than the South due to pampering by China and the former Soviet Union during the Cold War.? But now, the North?s economy is barely three percent of the South?s, with half the population. The majority of North Koreans suffer from food shortages, according to UN reports.

?In the South, there is a wonderful example of a highly successful Korean market economy?the North claims to be morally superior and a purer Korean state, unpolluted by Western capitalism.? If they go down the road of market reform, that undermines a central plank of North Korean ideology,? Sneider said.

?The path of reform will be chosen by North Korea but China will certainly provide help,? said Lu Chao, director of North Korea Studies at the Academy of Social Sciences in Liaoning province, which shares a long border with North Korea.

Limited risk
Lu, who frequently meets with North Korean officials and businessmen from across the border, detects Pyongyang?s new focus on the economy.

?Kim Jung Un is focused on improving the quality of life, this can be seen in his visits to parks and artistic performances, in contrast with his father who prioritized the military,? Lu told NBC News.

At least 169 deaths have been reported in North Korea during the past two months as flooding continues to cover thousands of acres of farmland. NBCNews.com's Dara Brown reports.

?Some reforms are going on in the country, especially in agriculture,? he added, noting that farming reforms will pose ?limited risks? to the regime.

For the International Crisis Group?s Pinkston, US policy should remain ?deterrence and containment while being observant?.??

?The US should monitor, bilaterally and multilaterally, the situation in North Korea, maintain a strong deterrence and containment posture, but be willing, when the opportunity presents itself,? to engage North Korea if it changes its policy directions,? Pinkston said.

Clinton is scheduled to visit China Sept 4-5, before becoming the?highest-ranking US official to visit East Timor, which gained independence from Indonesia in 2002.

She will later visit the Asia-Pacific Economic Cooperation forum in Vladivostok, eastern Russia.

Analysts: Financial impacts after Venezuela blast

CARACAS, Venezuela (AP) ? The deadly blast and fire at Venezuela's biggest refinery are prompting critics to question whether the state oil company has been neglecting maintenance while helping fund government programs under President Hugo Chavez.

Analysts say the disaster at the Amuay refinery could also mean a financial hit for state-run Petroleos de Venezuela SA by forcing it to further increase imports of fuel for domestic consumption.

The refinery remained shut down Wednesday, a day after firefighters put out the last of the blazes that had raged in fuel tanks since the explosion early Saturday. Officials say the blast killed at least 41 people and injured more than 150.

In recent years, Chavez's government has increasingly used a share of earnings from the state oil company, known as PDVSA, to bankroll social programs known as "missions." Its contributions to such programs rose from less than $1.6 billion in 2004 to $10.4 billion last year.

The government's pressure on the company to generate funds for programs that shore up Chavez's support has led to a "deterioration that PDVSA has had in its refining activities," said Asdrubal Oliveros, an economist and director of the consulting firm Ecoanalitica.

He said the state oil company has concentrated bigger investments in oil production to prevent output from slumping "but has neglected other activities, among them refining."

He and other oil industry experts say insufficient maintenance made disasters likelier. Government officials counter that PDVSA has invested $6 billion in maintaining refineries during the past five years.

It remains unclear how much money the disaster may cost PDVSA.

"That is evidently going to generate bigger supply problems in the country than those that already exist," said oil expert Juan Carlos Sosa, who heads the Venezuelan consulting company Petroleo YV.

He said he expects the refinery shutdown will lead to increased fuel imports, meaning more government spending on fuel at international prices.

Sosa said rising imports of gasoline and other refined fuels even before the disaster reflected problems at Venezuelan refineries that have prevented them from keeping up with demand.

In the first half of this year, fuel imports by PDVSA reached $4.9 billion, up 86 percent from the $2.6 billion in imports during the same period last year, according to official figures.

That included 54,000 barrels of gasoline per day that Venezuela imported from the U.S. in April, the last month for which figures were available. That monthly average was 38 percent higher than what Venezuela was buying from the U.S. during the same month last year, according to the U.S. Energy Information Administration.

Sosa and other analysts say Venezuela has been importing more fuel in recent years both because people are using more and because refineries aren't keeping up. Sosa said that's partly due to maintenance problems.

In other countries, such a refinery disaster would likely bring higher costs at the pump for customers. But Venezuela has for decades offered its citizens highly subsidized gasoline at the cheapest prices in the world: about 9 U.S. cents per gallon (2 U.S. cents per liter).

Oil Minister Rafael Ramirez has said Venezuela has plenty of fuel on hand to meet domestic demand in the aftermath of the disaster, but he has not discussed the possible financial impacts for the state oil company.

Biologists create first predictive computational model of gene networks that control development of sea-urchin embryos

ScienceDaily (Aug. 29, 2012) ? As an animal develops from an embryo, its cells take diverse paths, eventually forming different body parts -- muscles, bones, heart. In order for each cell to know what to do during development, it follows a genetic blueprint, which consists of complex webs of interacting genes called gene regulatory networks.

Biologists at the California Institute of Technology (Caltech) have spent the last decade or so detailing how these gene networks control development in sea-urchin embryos. Now, for the first time, they have built a computational model of one of these networks.

This model, the scientists say, does a remarkably good job of calculating what these networks do to control the fates of different cells in the early stages of sea-urchin development -- confirming that the interactions among a few dozen genes suffice to tell an embryo how to start the development of different body parts in their respective spatial locations. The model is also a powerful tool for understanding gene regulatory networks in a way not previously possible, allowing scientists to better study the genetic bases of both development and evolution.

"We have never had the opportunity to explore the significance of these networks before," says Eric Davidson, the Norman Chandler Professor of Cell Biology at Caltech. "The results are amazing to us."

The researchers described their computer model in a paper in the Proceedings of the National Academy of Sciences that appeared as an advance online publication on August 27.

The model encompasses the gene regulatory network that controls the first 30 hours of the development of endomesoderm cells, which eventually form the embryo's gut, skeleton, muscles, and immune system. This network -- so far the most extensively analyzed developmental gene regulatory network of any animal organism -- consists of about 50 regulatory genes that turn one another on and off.

To create the model, the researchers distilled everything they knew about the network into a series of logical statements that a computer could understand. "We translated all of our biological knowledge into very simple Boolean statements," explains Isabelle Peter, a senior research fellow and the first author of the paper. In other words, the researchers represented the network as a series of if-then statements that determine whether certain genes in different cells are on or off (i.e., if gene A is on, then genes B and C will turn off).

By computing the results of each sequence hour by hour, the model determines when and where in the embryo each gene is on and off. Comparing the computed results with experiments, the researchers found that the model reproduced the data almost exactly. "It works surprisingly well," Peter says.

Some details about the network may still be uncovered, the researchers say, but the fact that the model mirrors a real embryo so well shows that biologists have indeed identified almost all of the genes that are necessary to control these particular developmental processes. The model is accurate enough that the researchers can tweak specific parts -- for example, suppress a particular gene -- and get computed results that match those of previous experiments.

Allowing biologists to do these kinds of virtual experiments is precisely how computer models can be powerful tools, Peter says. Gene regulatory networks are so complex that it is almost impossible for a person to fully understand the role of each gene without the help of a computational model, which can reveal how the networks function in unprecedented detail.

Studying gene regulatory networks with models may also offer new insights into the evolutionary origins of species. By comparing the gene regulatory networks of different species, biologists can probe how they branched off from common ancestors at the genetic level.

So far, the researchers have only modeled one gene regulatory network, but their goal is to model the networks responsible for every part of a sea-urchin embryo, to build a model that covers not just the first 30 hours of a sea urchin's life but its entire embryonic development. Now that this modeling approach has been proven effective, Davidson says, creating a complete model is just a matter of time, effort, and resources.

The title of the PNAS paper is "Predictive computation of genomic logic processing functions in embryonic development." In addition to Peter and Davidson, the other author on the PNAS paper is Emmanuel Faure, a former Caltech postdoctoral scholar who is now at the ?cole Polytechnique in France. This work was supported by the National Institute of Child Health and Human Development.

Tokyo Gas Co., Ltd. today concluded with Malaysia LNG Sdn. Bhd., a Memorandum of Agreement to renew the LNG sale and purchase contract of Malaysia Dua project, which will expire on March 2015.

Tokyo Gas has procured LNG from the Project since 1995 under the current contract. Tokyo Gas has kept discussions to renew the contract with Malaysia LNG, and today reached a conclusion of a Memorandum of Agreement. With this agreement, Tokyo Gas will procure approximately 900 thousand tons of LNG per annum over a period of ten years starting from April 2015.

In accordance with this agreement, Tokyo Gas and Malaysia LNG will move forward with discussions to conclude a new LNG sale and purchase contract.

Tokyo Gas and Malaysia LNG have other LNG sale and purchase contracts, and have built a trust in relationship spanning approximately 30 years. This agreement will serve to maintain stable trade between Tokyo Gas and Malaysia LNG.

From here onwards, Tokyo Gas will work towards stable and competitive procurement of LNG.

    Birthplace of most European and West Asian languages traced to Turkey

    Using methods borrowed from epidemiology, researchers have identified Anatolia, a peninsula that is now part of Turkey, as the origin of the major language families of Europe and West Asia.

    English is one member of a large family, the Indo-European languages, that are now spoken by a huge swath of the world. But where they originated is the subject of controversy, with experts undecided between two areas of western Asia.

    Borrowing a technique used to reconstruct family trees for viruses, an international research team has come down squarely on one side of the debate: Indo-European languages originated in Anatolia, a southwestern Asian peninsula that is now part of Turkey, between 8,000 and 9,500 years ago, and were carried, at least in part, by the spread of agriculture.

    Other researchers maintain that Indo-European languages originated in the steppes north of the Caspian and Black seas 6,000 years ago and were spread by the semi-nomadic Kurgan people.

    "These two theories have two different ages and homelands, and by tracing back in time using these methods to study viral outbreaks, we are able to test between the theories," Quentin Atkinson of the University of Auckland in New Zealand said in an audio interview released by the journal Science, in which the new research appears.

    Instead of constructing a family tree by comparing the DNA of viruses, Atkinson and colleagues compared what are known as cognates, or words in different languages with the same origin. For instance, the English "mother" and the Spanish "madre" are cognates. [Original Language Sounded Like Yoda]

    The researchers included about 20 extinct languages in their sample of 100 Indo-European languages; some of these extinct languages, such as Hittite, were spoken more than 3,000 years ago. These ancient languages helped the team look further back in time.

    They looked to historical events, such as the breakup of the Roman Empire's language Latin into the Romance languages, to establish a time scale for the evolution of the Indo-European languages.?

    They then used a statistical method to focus in on the family trees that best explained their data. The result strongly favors the Anatolian hypothesis, Atkinson said.

    The spread of agriculture, either as new generations of farmers sought out new land or through the conversion of hunter-gatherers, was a mechanism that would explain the expansive spread of the languages in this family, according to the researchers, but they added that agriculture was probably not the sole driver of language spread. ?

    The research is detailed in Friday's (Aug. 24) issue of the journal Science.

    Opinion: Dying with Dignity

    Warning: This piece talks about suicide and death, and may be upsetting to some.

    On Wednesday Tony Nicklinson died, and that?s a tragedy. Of course it?s a tragedy for his friends and family, as any death is, but in Tony?s case it?s especially tragic because he was a man who wanted to face the end on his own terms; a man who even welcomed death. And the British courts said no.

    Tony suffered from Locked-in Syndrome,?a result of a stroke in 2005 which almost completely paralysed him and left him trapped in what he described as ?a living nightmare?. Although his mind was as sharp as ever, Tony could only communicate by blinking and was utterly dependant on others to care for him. With the prospect of (as he described it) dribbling his way through the next 20 years before him, completely unable to do anything for himself and barely able to communicate with his loved ones, he made the decision to end his own life.

    Tony Nickilson?was not suffering from passing depression, he was not being pressured by anyone and he was completely lucid.

    Suicide is never an easy topic to talk about and it?s an especially difficult one to legislate on, but given the number of recent cases like Tony?s, it?s a conversation that needs to be had. Tony, as a clear-minded and intelligent individual, made the decision to take his own life. He was not suffering from passing depression, he was not being pressured by anyone and he was completely lucid. The decision to take your own life is not one to be made lightly, but after living with Locked-in Syndrome for seven years he knew that he wanted to have the option. He insisted that he didn?t want to go yet but he did want to know that, when the time came, his doctor and his family would not be in danger of prosecution if they helped him to die comfortably. With that in mind, he went to court to argue his case and get an assurance that his family would be safe when he was gone.

    Tony?s desire to face death on his own terms isn?t a new idea. It was somewhat run-of-the-mill for the Victorians, who had such cocktails of drugs sloshing around in their society that choosing to die without pain, in the comfort of your own home, was a relatively straightforward option. Ironically, it?s our recent medical advances that have made life so unliveable for some. Go back 100 years and the stroke that locked Tony inside his own body would surely have killed him, and when asked ?Do you regret the surgeons saving your life??, he admitted that if he?d known the end result he would never have called for an ambulance. That?s not to say that stroke victims shouldn?t be helped; of course we should do everything we can to save people. Modern medicine has improved the lives of countless people and we should be incredibly proud of what science has achieved. However, we have to acknowledge that with our responsibility to save lives we, as a society, must also take responsibility for the state that those lives are left in.

    Not all of the problems that drive someone to take their own life can be helped.

    In 1993 we changed the law so suicide would be decriminalised in Ireland. We didn?t do it because we thought that suicide was no longer a problem, we did it because it?s a huge problem and we need to acknowledge that victims of suicide are just that: victims who should be helped, not punished. But not all of the problems that drive someone to take their own life can be helped. Tony?s decision was one that he spent years thinking over and, with no hope of recovery or improvement in his condition, he decided that that was not the kind of life he wanted to live.

    Unfortunately, those with (arguably) the best reasons to want to die are the ones who are least able to carry out their own wishes. Victims of total paralysis, motor neuron disease and other conditions are trapped not only within their own bodies but within a legal system which does not grant them the same right to end their life that a more able-bodied person has. They cannot fulfil their wishes to die painlessly without outside help, and they cannot get outside help without running the risk that those who assist them, often family and friends, could be charged with murder. So Tony stopped eating.

    When he heard that the English High Court had denied his request for an assurance that his family and doctor would not be prosecuted if they helped him end his life, he took the only course of action left to him and refused food. Over the next week Tony starved himself, weakening his body before he contracted pneumonia and passed away days later. He eventually succeeded in killing himself in one of the most drawn-out and painful ways possible because the government and the courts both refused his request for permission to die the relatively painless, dignified death that he wanted.

    The court cases referred to in this article took place in England, but the law in Ireland is exactly the same, and we have people living (and dying) in exactly the same circumstances. The legal system puts families who are already going through incredibly difficult circumstances in the impossible situation of respecting the wishes of a loved one and easing their pain or obeying the law. It?s an incredibly complex issue and it?s certainly not an easy subject to legislate on, but the advent of modern medicine means we?re not playing the same game that we were when these laws were drafted. We?ve changed the rules, and it?s time we acknowledged that.

    Microwave ovens may help produce lower cost solar energy technology

    ScienceDaily (Aug. 24, 2012) ? The same type of microwave oven technology that most people use to heat up leftover food has found an important application in the solar energy industry, providing a new way to make thin-film photovoltaic products with less energy, expense and environmental concerns.

    Engineers at Oregon State University have for the first time developed a way to use microwave heating in the synthesis of copper zinc tin sulfide, a promising solar cell compound that is less costly and toxic than some solar energy alternatives.

    The findings were published in Physica Status Solidi A, a professional journal.

    "All of the elements used in this new compound are benign and inexpensive, and should have good solar cell performance," said Greg Herman, an associate professor in the School of Chemical, Biological and Environmental Engineering at OSU.

    "Several companies are already moving in this direction as prices continue to rise for some alternative compounds that contain more expensive elements like indium," he said. "With some improvements in its solar efficiency this new compound should become very commercially attractive."

    These thin-film photovoltaic technologies offer a low cost, high volume approach to manufacturing solar cells. A new approach is to create them as an ink composed of nanoparticles, which could be rolled or sprayed -- by approaches such as old-fashioned inkjet printing -- to create solar cells.

    To further streamline that process, researchers have now succeeded in using microwave heating, instead of conventional heating, to reduce reaction times to minutes or seconds, and allow for great control over the production process. This "one-pot" synthesis is fast, cheap and uses less energy, researchers say, and has been utilized to successfully create nanoparticle inks that were used to fabricate a photovoltaic device.

    "This approach should save money, work well and be easier to scale up at commercial levels, compared to traditional synthetic methods," Herman said. "Microwave technology offers more precise control over heat and energy to achieve the desired reactions."

    Funding and support for this research was provided by Sharp Laboratories of America, the Oregon Nanoscience and Microtechnologies Institute, and the Oregon Process Innovation Center for Sustainable Solar Cell Manufacturing, an Oregon BEST signature research facility.
